HILLSIDE BAKERY is a small, baker-owned enterprise, located in Knoxville, Tennessee. The bakery opened for business in July 2002.  Hillside specializes in whole-grain, naturally leavened breads made with organic or biodynamic ingredients.

Because bread is our passion, we are committed to providing you with the highest quality baked goods. We specialize in naturally leavened breads, whole grain muffins, and granolas. Hillside breads are made with simple, pure ingredients, whole flour, water, natural leavening, and sea salt. Naturally leavened breads are made slowly, over many hours, resulting in bread with a complex taste and multiple layers of flavor.  We offer various multigrain, seed, nut, and fruit breads as specialties throughout the year. 

All whole grains used in our breads are freshly stone-milled in the bakery before each bake on our Austrian-made mill.  No added oil, dairy, sweetener, or baker’s yeast is used in the majority of our breads.  In addition Hillside breads use very minimal amounts of sea salt.
