Traditional Bakes – Sourdough & Natural Levain Breads

All the breads in the Traditional Bakes and Specialty & Seasonal sections (below) have natural sourdough for leavening (organic stone-ground whole wheat and unbleached flours, pure water).

Raisin with Coriander

Miche – All-purpose whole grain bread (pictured in the top photo). Organic: stone-ground whole wheat and whole rye, unbleached flour, and salt.

Multi-Grain – Whole Grain bread with a crunch. Organic: stone-ground whole wheat and whole rye, and unbleached flour, flax seed, millet, wheat berries, and salt.

Pain au Levain – Our White French bread (pictured on top shelf of bread rack photo below). Organic: unbleached flour with a touch of stone-ground whole rye and whole-wheat flours, and salt.

Raisin with Coriander – Breakfast bread. It makes great French toast, and don’t count out the peanut butter and jelly sandwich. Organic: unbleached flour, stone-ground whole wheat flour, plumped raisins, salt, and coriander.

Sunny Flax – Whole wheat bread with flax seeds and sunflower seeds. Organic: stone-ground whole wheat and unbleached flours, flax seed and sunflower seeds, salt.

Specialty & Seasonal – Sourdough & Natural Levain Breads

Cherry-Chocolate Levain – Organic: unbleached and stone-ground whole wheat flours, natural sourdough for leavening, dried cherries (cane-sugar sweetened), French chocolate, salt. Breakfast, lunch, dinner, or dessert.

California Dried Tomato –  Organic: unbleached and stone-ground whole wheat flours, natural sourdough for leavening, California dried tomatoes, basil, salt. Great alone, but your cheese of choice turns this bread into a meal.

Kalamata Olive with fresh Rosemary – Kalamata olives and freshly chopped Rosemary from our garden, lend great flavor to this bread. Organic: unbleached and stone-ground whole wheat flours, natural sourdough for leavening,  pitted Kalamata olives, rosemary, salt.

Normandy Apple Levain  Organic: unbleached white flour, stone-ground whole wheat flour, unfiltered apple juice, natural leavening, dried apples, malted barley flour, salt.

Pumpkin Multi-Grain  A very moist, hearty seasonal bread.  Customers love this toasted, with cheese, for sandwiches. Organic: unbleached flour, pumpkin puree, stone-ground whole wheat & whole rye flours, sunflower seeds, pumpkin seeds, pure water, cinnamon, ginger, natural sourdough for leavening, and salt.

Rye  Rye with substance, with or without caraway or sunflower seeds. Organic: unbleached and stone-ground whole rye flours, salt.

Spelt – A hearty whole spelt pan bread. Organic: one hundred percent stone-ground whole spelt flour, salt.

Yeasted, Slow-Rise Breads

Oatmeal bread

Oatmeal – A flavorful, light bread with whole rolled oats and wheat. Organic: unbleached flour, stone-ground whole wheat flour, whole rolled oats, honey, milk, extra virgin olive oil, salt, and baker’s yeast.

Whole Spelt Pizza dough – Our whole Spelt pizza dough is full of flavor. Organic: stone-ground whole Spelt flour, salt, and baker’s yeast.

Holiday Breads  

Holiday Fruit Bread – Festive fruit bread may be eaten for breakfast, dessert, tea time, anytime! Organic: unbleached flour, stone-ground whole wheat flour, plumped raisins, cranberries sweetened with organic cane sugar, dried apricots [no sulphur], salt, coriander, and malted barley flour.

Stollen  Traditional German Christmas bread, is a real treat!  This special bread is enriched with butter and is packed with organic fruits and almonds.  Organic: unbleached flour, cultured butter, Thompson raisins, dried cranberries [sweetened with organic cane sugar], dried apricots [no sulphur], almonds, whole eggs, cane sugar, milk, Hillside candied orange peel, pure orange flavor, salt, lemon zest, cinnamon.  Dark rum, instant dry yeast.

The baked Stollen is twice brushed with melted butter, coated with cane sugar,  then covered in powdered sugar.
